Italian Meatballs

Ingredients: 500 g beef mince; 1 small onion; 1/2 cup parsley; 1 large egg; 1/2 cup breadcrumbs; 1/2 cup parmesan; 1 tsp salt; 3/4 tsp ground black pepper; 2 tbsp olive oil; 2 cloves garlic; 1 onion; 1 small carrot; 500 g passata; 1 tsp salt; 5-6 basil leaves; spaghetti; parmesan

Soft and juicy meatballs cooked in tasty tomato sauce. Quick and easy to make and all in one pan.

Ingredients

For the Meatballs

500 g

beef mince

1 small

onion, finely chopped

1/2 cup

parsley, finely chopped

1 large

egg, beaten with a fork

1/2 cup

breadcrumbs

1/2 cup

parmesan, freshly grated

1 tsp

salt

3/4 tsp

ground black pepper

For the Tomato Sauce

2 tbsp

olive oil

2 cloves

garlic, finely chopped

onion, finely chopped

1 small

carrot, finely diced

500 g

passata

1 tsp

salt

5-6

basil leaves

To Serve

spaghetti, or pasta of your choice

parmesan, freshly grated

Method

1. To make the meatballs, combine all ingredients for the meatballs in a large mixing bowl and mix thoroughly with your hands until everything is well combined. Take a tablespoon of mixture and roll into a meatball. Repeat with the rest of the mixture.
2. To make the tomato sauce, heat oil in a pan over a medium heat, add the onions and garlic and cook for 2-3 minutes or until the onions have softened, then add the carrots and cook for another 2 minutes
3. Add the meatballs and fry until they are lightly golden on each side. Reduce the heat to medium low and add the passata and salt. Put the lid on and let the sauce simmer for 10-12 minutes or until it has thickened slightly
4. Serve with pasta and freshly grated parmesan
